Dear Lynne:
My wife's mother says corn belongs in the refrigerator in the husk; I think it's more sanitary to husk it first. Is there a right and wrong here? While we are at it, how do you tell the taste of corn before you buy it and why is the sweetness so intense sometimes that the corn's flavor disappears? Dear Son-in-Law:
Your mother-in-law has it right. Storing fresh corn in the husk keeps it moister in the very drying atmosphere of the refrigerator. Assumed here is that the corn is in a sealed plastic bag.
Although grocers hate to hear this, the only way to know if corn is to your liking is to taste it. Usually there is a display ear; please always ask if you may pinch a few kernels to taste. Or buy one ear and sample. Yes, corn is good raw....
